When Phil Howard was working every hour under the sun back in the 1990s to gain a second Michelin star at The Square, he didn’t realise he was also running an academy in which his sous-chefs would go on to make their own waves in the restaurant world.
However, it’s a mark of Phil as a man, and as a chef, that many of those who passed through the kitchen at The Square are still friends, and cite him as a major influence. People like Brett Graham and Jun Tanaka, and the chef who will be joining Phil at Elystan Street on November 21st – Adam Byatt.
Adam, like Phil, started his career working in the classic French style. When he was just sixteen he joined the kitchen team at Claridges as an apprentice and subsequently moved to The Ritz. He then joined Phil, who was bringing a contemporary British twist to classical cooking at The Square. He spread his wings, opening Thyme in Clapham which was a huge hit from day one. Since then he’s become a serious restaurateur with three restaurants in his stable including the Michelin-starred Trinity.
There is so much that Phil and Adam share, a passion for simplicity, seasonality and the quality of ingredients, an extraordinary work ethic, and fitness regimes that put most of us to shame. Above all, they share a focus on what their customers want to eat, as opposed to indulging in cheffy showing off.

Phil says: “There is no chef in the UK today that I respect more. He is now a statesman of our industry , a truly exceptional chef, a leader, mentor, a mighty fine man – and a great mate. I simply cannot wait to cook up a storm with him and it will be a privilege for us all to have him in the Elystan Street kitchen.”
