Toby has been head chef of Elystan Street since it’s opening in 2016 having spent 4 years with Phil at The Square. He has been instrumental in the smooth running of the kitchen and restaurant. Phil always said that if he was to open another restaurant he wanted to have fun and Toby certainly guarantees that – taking charge of the kitchen in his own inimitable and larger than life manner!
Sarah joined Elystan Street from The Square, bringing with her all the skills necessary to run Elystan Street smoothly and efficiently. She has been key to achieving a rare balance with her front of house team – slick, informed and professional service delivered with genuine friendliness and warmth. Her youthful energy is felt throughout the team. “I want to ensure our guests leave having had a wonderful time”, she says.
Cameron brings a whole lot more than just a very fine beard to our front of house team. His career has taken him to a wonderful and eclectic group of ambitious restaurants across the world. He’s the perfect modern day sommelier – bundles of hard earned knowledge, a deep appreciation of the classics and an appetite to unearth refreshing, interesting, modern and characterful wines.
