A highly respected figure in the industry with a multitude of awards to his name and without doubt a true chef’s chef. Phil has always cooked with harmony of flavour being his absolute mantra – and this being achieved through classical flavours and rigorously seasonal and ingredient-led cooking. None of this has changed at Elystan Street but an increased focus on vegetables and a lightness of touch now prevails.
Aaron honed his skills under the watchful eye of Adam Byatt (one of Phil’s early protégées), He is a great craftsman who brings a wealth of classical experience and a fresh, creative and youthful approach to cooking and to running a kitchen. In Aaron we have a chef of rare ability and one who leads, inspires and motivates the kitchen in exactly the way we would like it to be done – with great care taken over the food and the ethics of its production.
We first came across Julie when she worked at The Square but it is more recently that she joined us after a spell at Clos Maggiore. Julie is one of those fantastic all round team players and as the E street restaurant General Manager she is not only central to the smooth running of the service but of the restaurant itself. She’s hard working, loyal, passionate, caring and efficient and a great asset to Elystan Street.
